TOMKHA KAI

Chicken in Coconut Milk Soup

INGREDIENTS

  • 300g./12 ounces chicken sliced
  • 1 cup of coconut milk (thick)
  • 2 cup of thin coconut milk ( 1 cup coconut water and 1 cup water)
  • 6 thin slices galangal – cut in half
  • 1 onion cut in half
  • 1 big tomatoes cut in half
  • 2 tablespoon slice lemongrass
  • 4 Kaffir lime leaves – torn into pieces
  • 1 tablespoon lime juice
  • 3 coriander leaves – chopped
  • 2 small chilies crushed
  • 200g/8 ounces. mushrooms – cut in half (any kind you like)

Thai Cooking School Chiang Mia - Soup SF-10

Step 1:Put the thick coconut milk into a wok/frying pan with high heat until coconut milk is boiling and thick, stir for 30 seconds

Step 2: Add the thin coconut milk and wait until they are boiling

Step 3: Add chicken, lime juice ,onion , let it cook for 2 Minutes

Step 4: Add tomatoes, coriander leaves, and  turn of the heat

Serve and Enjoy!

We learned how to cook Tomhka Kai soup at Viteethai cooking school in Chiang Mai, Thailand. We now have a new favorite thai soup, and a recipe to go along with it. We can’t wait to whip this up at home in our own kitchen!
