24 Feb Catalan Cream Quick and Easy Recipe
Crema Catalana or Catalan Cream is Spanish for the popular dessert we are use to calling crème brulée which is French. Catalan cream just melts in your mouth…Don’t think you can make it home? Don’t doubt yourself, follow this quick and easy recipe.
- 3 egg yolks
- 500ml/16 ounces milk
- 80g sugar
- 20g cornflour
- 1 cinnamon stick
- Pieces of lemon peel
- Zest of 1 lemon
Step 1: Whisk the egg yolks with the sugar and cornflour in a bowl. Pour milk into a saucepan and add the whisked egg mixture along with the lemon peel, zest and cinnamon.
Step 2: Cook at medium heat until it is close to boiling point, stirring continuously. Just before mixture starts to boil take it off the heat. Take out the cinnamon stick, and portion into small dishes. Refrigerate until ready to serving.
Step 3: Before serving if you happen to have a blowtorch, add some additional sugar on top of the pudding and burn the sugar with the blowtorch until it develops a hard crust.
